Grape molasses

Grape molasses produced by concentration of the wort obtained from the syrup of grape (Vitis vinifera) is a traditional food of our country. Scientific studies have revealed that consumption of grape delays the emergence of many diseases from cardiovascular diseases to high cholesterol (Yang & Xiao, 2013). Grape molasses is rich in simple carbohydrates which enter to blood fast and meet the energy needs quickly. In addition to fruit sugars grape molasses contain minerals such as potassium, calcium, magnesium, phosphorus and iron as well as phenolic substances and is a valuable food because it provides energy and has positive effects on human health (Karababa & Develi Işıklı, 2005).
